Baked Beef and Potatoes Casserole
2-3 lb. Sirloin Roast
2 lb Zucchinis
2 lb Potatoes
2 lb Eggplants
1 Green pepper
3 Sliced onions
2 Thinly sliced green onions
2 lb Ripe peeled tomatoes
1 batch Diced parsley
Salt, Pepper
One bottle
Farmer Boy Restaurant
House Recipe Greek Dressing.
Rub Roast
with salt, pepper and one half cup of Greek dressing Clean
and chop all the vegetables in large pieces, place in roasting
pan. Cover with remaining bottle of dressing. Bake in a deep
pan for about
1 1/2 hr (medium oven).
